The Club: An important part of Pittsburgh’s history for more than a century, Allegheny Country Club is a family friendly country club with extensive sport, recreational, and social activities. With a sustained commitment to excellence, members of all ages enjoy outstanding facilities and programming in a setting rich with tradition, inspiring the formation of enduring friendships.

Overlooking the golf course and tennis courts sits a sparkling white grand old dowager queen accented with touches of green known as the Clubhouse. After World War I, Allegheny became the scene for several golf and tennis tournaments, such as the international Davis Cup Matches and the U.S. Women’s Amateur Golf Tournament in the fifties. In 1990, the U.S. Women’s Mid-Am Championship was held at Allegheny as was the 40th USGA Senior Women’s Amateur Championship in 2001.

Over the past several years, the Club developed a Long-Range Plan and many improvements and additions have been made. A new casual dining room and bar, renovations and an expansion of the Men’s Locker Room, the addition of four new paddle courts and a state-of-the-art warming hut, a Golf Learning Center and practice facility, and expanded ballroom terrace have all been added. More improvements are planned as part of the club’s long-range plan and will include a major kitchen renovation replacing its current well-equipped and fully functional main kitchen and bake shop.

We can have the best facilities, activities and programs, but without Staff Members providing exceptional service, the Club will not achieve our mission. Club Dining: Dining and event facilities are comfortable and highly functional.  Ala carte venues include a semi-formal Grille Room, Grille Bar and Terrace Room (Front Porch). All three areas are open for breakfast, lunch and dinner. A Pool Snack Bar (Open Memorial thought Labor Days) and Halfway House are also provided seasonally.

The club is known for producing special events and parties on various scales for members and community organizations with several sized venues accommodating groups of all sizes. Banquet areas include an elegant Ballroom with Loggia and several private rooms including the Green Room, Red Room, Robinson Room and Back Terrace. The Club serves out of a Main Kitchen and has two satellite Kitchens.

Culinary – Scope & Requirements:  The culinary department produces all food preparation and presentation throughout. Annual food sales are $1,663,607 while maintaining a 38/41% cost of goods. (Sales are a 40-60 mix of ala carte and banquet) The Club uses quality ingredients and is looking to achieve continued consistency in the presentation and quality of the product. The kitchen labor budget is $527,000 which supports a staff of eighteen. The Club is open 11½  months per year and busiest from May through September.

The culinary team produces events ranging from 1,000 guests on Independence Day celebrations, 400 person weddings to small birthday parties with service styles from plated to lavish buffets.

The restaurants offer Progressive American regional cuisine and features a range of comfort casual selections to upscale modernist fare. ACC’s Bake Shop also prepares all of the Club’s baked goods, specialty crackers and desserts. The culinary staff is unified by a passion for the highest quality and commitment to pleasing its membership.  A passion demonstrated with each meal service throughout the club.  John King, the Club’s respected Executive Chef for the past 27 years will retire in the coming months.

The Club is looking to build upon solid traditions while tactfully advancing its menu programing, methods and reputation as the finest foodservice program in Western PA.

Culture: The primary focus for this position is to find an individual that will fit into the successful culture of the Club coupled with an intuition that will progressively advance its culinary practices.  A standup individual who works in an ethical manner, values integrity and the importance of relationship. Someone who will approach the position with humility and operates with Care/Competency and Trust. This individual must become an active member of the Executive Team family and work as part of the team for the betterment of the entire organization.

Communications: The Executive Chef will attend all Executive Staff meetings and is expected to maintain a professional relationship with all staff members. The Executive Chef should also be available to the membership for consultation on menus for private events. Someone who can relate to the members; is visible and can lead them into trying new dishes or excite them through innovation. He/she earns the members respect by serving a consistently excellent product in a timely manner. Is willing to participate in food related club events, i.e., Member Cooking Classes etc. Equally it is important to address all feedback, complaints/compliments with a sense of urgency.

Financial Controls: The Executive Chef will be expected to understand accounting concepts as they relate to kitchen operations. He/She will help with the preparation of budgets for annual operations and events and is expected to operate within budget. The Chef oversees the upkeep and maintenance of the kitchens and as needed to request dollars for capital replacement items on an annual basis. The Executive Chef will be“Pro-active” in managing food and labor cost.
