Perched on a hilltop, Toscana’s 90,000 square-foot Club Villa flawlessly resurrects the golden age of classic Tuscan architecture. Its stone façade and cool, cloistered passageways connect to richly appointed interiors that house the Golf Club, tennis boutique, an award-winning golf shop, dining facilities, an extensive sports and fitness club and Spa Bella Vita.) The community boasts panoramic mountain views and, since Toscana is not situated directly against the mountains, affords abundant sunshine during the day and unparalleled desert sky views at night.

Facilities: The main dining room in Il Forno features vaulted ceilings, rustic lighting and arched windows showcasing views of Toscana. It includes 140 seats, serves breakfast and lunch Thursday/Sunday, dinner Wednesday/Sunday, the Covered Patio and Garden Terrace have hand-crafted wrought iron trellises and spectacular views of Jack Nicklaus Signature Golf framed by the Santa Rosa Mountains.

The Den is a casual 40 seat dining room that serves breakfast and lunch Monday through Sunday. (Closed Tuesday and Wednesday during the summer) The Club also serves ala carte in the Locker Room breakfast and Lunch Monday through Sunday and dinner Wednesday through Saturday, The Club also serves banquets serving from 10 to 600 guests.

Summary/Duties: The candidate we are seeking will be exceptionally strong in modern American Cuisine. Is an organizer with technology skills and has leadership ability. A graduate from a culinary school is preferred.

  • Assist and provide management oversight at a la carte locations and banquets.
  • Able to prepare, organize, and work all stations in all outlets.
  • Ensure all shifts are covered in the event of vacations or call-outs.
  • Expedite during meal periods; taste and inspect food to ensure quality preparation and presentation.
  • Assist Executive Chef with development and adherence to budgets.
  • Enforce standard operating procedures.
  • An individual whom is dedicated to culinary profession and continues self-development.

Meet Executive Chef – Eric Wadlund

Wadlund,_Eric_2014_RSizedEric joined Toscana after his six years as Executive Chef and Director of Operations at Spencer’s Restaurant in Palm Springs, CA. Eric leads the culinary staff at Toscana and brings his own unique twist on modern cuisine and American classics. His goal is to ensure that Members and their guests have an inspired and enjoyable dining experience at Il Forno, the Wine Cellar and at Club and private events. He is the coauthor of “Palm Springs Flavors,” released by Westcliffe Publishing in 2006. Eric’s passion led him to work in some of America’s finest four star restaurants including Azur by Le Bernardin, The Occidental, The Rattlesnake and Terra Cotta. He has had the honor of cooking at the James Beard House three times, a significant achievement that few chefs ever experience.

Scope, Expectations & Requirements: Annual food sales are $1,100,000. (Sales are a 30% banquet and 70% ala carte) The Club uses quality ingredients and is looking to enhance the dining experience and consistency in presentation and quality. A kitchen staff budget is $650,000 which supports a kitchen staff of eighteen
