hundred years ago they traveled by foot or horseback to play on rough pasture land turned into a golf course by
a group of recent converts to a sport still obscure to Americans. The informal group grew and the Club moved
to the west and then to the west again. It survived fire, wars, financial reversals, and more as it evolved into the
Hinsdale Golf Club of today – a special place for its members and friends, just as it was a century ago.

Scope, Expectations & Requirements: Our Client, a respected club located in the West suburb of Chicago, is in
search of a Working Executive Chef. This is a very desirable opportunity for a dedicated culinary professional
possessing a logical career path with quality experiences coupled with progressive responsibilities. The Club is
financially sound and stable in its leadership. Membership values its unique community and honors its role in
golf history. Club programs, facilities and cuisine are appropriately progressive while respectful of its traditions.
Interest in membership remains strong including a healthy waitlist. The Club has a history of stable governance
reflected in management stability and its tenured staff.

The Executive Chef is responsible for the entire culinary operation including, but not limited to, menu design,
food production, staff recruitment and development, establishment of standards, effective communications and
cost controls. Annual food sales are at $ 1.1MM with a mix of 70% ala carte and 30% banquet while maintaining
a cost of goods of 36%. The club is supported by approximately 560 members whose average age is 55. The Club
is open 11 months per year serving lunch and dinner six days per week. The Club has a main dining room that
can seat 300 for banquets, a casual dining room serving approximately 60 covers daily and a snack bar operation
that is open seven days per week during the summer season. The Clubhouse is 40,000 sq. with two kitchens, a
culinary staff of 14 and 6 stewards and supported by a $694,282 labor budget.

  • The Executive Chef has excellent culinary skills and directly supervises and participates on the line.
  • Is able to mentor/coach and build an effective culinary team that works in a consistent manner.
  • Is innovative with creative and fresh ideas and products yet respectful of the clubs culinary traditions.
  • Maintains the highest professional standards for food quality and sanitation.
  • The Executive Chef is expected to be personable and interact with members and guests.

Ideal Candidate Profile: This Working Chef position requires strong leadership qualities and administrative skills
demonstrated by a hands-on approach managing daily food production that assures a consistent quality. This
position will test the Chef’s ability to blend the right mix of creative offerings while being respectful of club
classics. The ultimate goal of the culinary team is to consistently produce well-prepared menu items with broadbased
appeal to the entire membership. Functional knowledge using club’s POS system, achieving budgeted
financial goals and producing P&L reports are also important.

Finally, the successful candidate must be a good fit for the culture of the Club. He or she must demonstrate
values, conduct, and integrity consistent with the Club’s. The Club’s membership values its employees and in

Salary and Benefits: The club is looking for a long-term match. The compensation package includes a
respectful base salary and performance bonus. Benefits include group health, dental, and life insurance; 401k
program with a 4% match; vacation and professional development allowance. A relocation allowance will also
