SUMMARY: Directly involved in daily production while providing leadership and training to culinary staff, ensuring a quality, consistent product for members and guests.
EXPECTATIONS:
- Provide platinum service while maintaining a clean and safe environment for members, guests, and staff
- Know and embrace the mission statement and platinum service basics
- Be prepared to work all shifts, weekdays, weekends, holidays
ESSENTIAL DUTIES include the following (other duties may be assigned):
- Assist and provide management oversight at all a la carte locations and banquets
- Be able to prepare, organize, and work all stations in all outlets
- Ensure all shifts are covered in the event of vacations or call-outs
- Expedite during meal periods; taste and inspect food to ensure quality preparation and presentation
- Develop, maintain, and execute comprehensive training program for all culinary staff
- Establish and enforce standard operating procedures
- Know, teach, and enforce proper sanitation practices and health department guidelines; inspect to ensure compliance
- Assist Executive Chef with development of and adherence to budgets
- Maintain budgeted food cost and labor goals; take corrective action as needed
- Conduct culinary manager and staff meetings
- Collaborate on menu planning, development, and costing for banquets and a la carte outlets
- Study current industry trends
- Ensure maintenance of proper inventory and rotation of products
- Maintain good working relationships with front-of-house managers
- Interact professionally and appropriately with members
- Foster an energetic atmosphere of cooperation and mutual respect
- Work closely with peer Sous Chefs
SKILLS/ABILITIES:

SUPERVISORY RESPONSIBILITIES:
Supervise and effectively interact staff of approximately 50.
Responsibilities include involvement in the interview and selection of culinary personnel; training; scheduling; planning and assigning work; appraising performance; rewarding and disciplining staff; addressing complaints and resolving problems; processing payroll; facilitating staff meetings.
EDUCATION and/or EXPERIENCE:
3-5 years’ experience in high-volume kitchen management with F&B sales of at least $4-6 million annually, experience in both a la carte and banquets. Culinary degree required.
