About the Club/Position: Memphis Country Club is a 110 year old, full-service private country club with 1,000 supportive members. The Memphis Country Club, is highly regarded within the “Platinum Clubs of America®” rankings. Located in the heart of Memphis, the club’s facilities include an impressive championship golf course, a 72,000 sq. ft. clubhouse, indoor and outdoor tennis facilities, swimming pool with snack shop, quaint hotel rooms, an abundance of programming appealing to member families and other services found only at top destination resorts and private clubs. Memphis Country Club is steeped in gracious southern tradition and hospitality.
The club has a solid reputation of quality foodservice. The current Executive Chef who has been with the Club for ten-plus years is moving into education as a Culinary Instructor. He has built a quality kitchen operation and management is poised to continue to build on its success. The goal is to continue to advance its foodservices to even a higher level of sophistication while adhering to its great regional cuisine traditions and Chef creations.
The ideal candidate will be a true working chef possessing a calm and organized demeanor. The candidate will have a proven track record of positive leadership and successful training/mentoring of culinary teams. The ideal candidate will possess effective business management skills to assist with implementation and monitoring of the budget, forecast for revenue and payroll expenses, and review of monthly P&L statements with the Club team. The Club prefers candidates who have achieved their CEC Certification from the American Culinary Federation. Prior experience as an executive chef a must and a degree from an accredited culinary program is preferred.
Scope, Expectations & Requirements: The Chef is responsible for all food production in its three kitchens. Food and Beverage sales are expected to exceed 2.5M in 2015. The Club has three member dining areas, elegant banquet facilities, and golf, tennis and aquatic food outlets. The Club’s kitchen is very well equipped with an aggressive schedule for keeping equipment current to the ever changing environment. A culinary and stewarding staff of 32 plus is supported by a realistic kitchen labor budget of $910,000. Overall member satisfaction is Key!
Ideal Candidate Profile: The position requires a strong, well-organized leader who can handle a multi-faced operation and is committed to being the best in their field. The Club is looking for a long-term fit. The right individual will be self-motivated, possess a creative approach to menu planning and continually be able to offer unique and distinctive dining experiences. The ideal candidate will possess a team attitude, healthy sense of humor, and solid business acumen along with attention to detail, organizational proficiency, and excellent communication skills. A proven track record of maintaining a sound sanitation program is important. Wine and beverage knowledge is a plus.

- Is innovative and creative. Chef participates in creating New Programs (Excitement) for membership.
- Must be exceptionally organized and professional, even under pressure.
- Ability to work for long periods of time in a fast-paced environment.
- Develop working operational and capital budgets for the fiscal year with assistance of General Manager and Controller.
- Work with the Social Director on creating exciting, consistently great, member personal events including weddings and birthdays: Club sponsored events, member parties, tournaments etc.
- Is “Dam good” in the A la carte side of the kitchen serving a consistent fresh product with a sense of urgency.
- Maintains a healthy/safe kitchen that operates within the Shelby County Health Code.
- Ability to “set the example” as a role model in our profession.
