In the early 1970’s Stanley Harwood began realizing his vision of building a neighborhood surrounding an 18-hole golf course. The local community of homeowners organized to see that vision carried out and the club was incorporated as Whale Rock Country Club in 1993, named after a prominent rock formation on what is now the 16th Hole. Today, the club is known as Red Rocks Country Club, honoring the myriad red rocks in the local scenery. When the new clubhouse opened in 1997 amenities included an outdoor heated pool and cabana area, a tented dining Pavilion, and the main building which houses the Golf Shop, dining areas, locker rooms and meeting space. During early 2015 Red Rocks Country Club is undertaking a $4.2 million renovation of the clubhouse that will more than double the existing square footage of the existing clubhouse. (See follow)
Facilities: Ala carte facilities include the Epic Bar; a casual dining room seating 90, the Main Dining Room which is casual during lunch and fine dining in the evening seats 150. Weather permitting Patio dining is very popular with 120 seats and the Cabana casual Pool Food and Turn on the golf course is open Memorial Day through Labor Day. The Culinary Garden: (A unique and special element for Farm to Table dining) What was once a two-acre waste land between the ninth hole and a fire station has been transformed into a Culinary Garden, providing members and guests fresh, locally-grown heirloom variety vegetables, fruit and herbs. The Club’s innovative approach to incorporating edible plants into its landscape has been featured in Board Room Magazine and Colorado Avid Golfer. Red Rocks Country Club sits on what was once the Harwood Ranch. The Club’s executive chef and master gardener oversee the Culinary Garden.
Summary: The candidate we are seeking is responsible for all food and pastry production and entrepreneurial minded. He or she will possess an artisan approach to the craft coupled with a persona exuding hospitality that is relationship savvy and intuitive creating menu programing that anticipates membership expectations. The Chef will develop menus; food purchase specifications and standardizes recipes. Hands-on supervising all food production and pastry staff. The chef will recruit, develop and perpetually mentor staff while monitoring food and labor budgets. Maintains the highest professional decorum, food quality and sanitation standards.
Scope, Expectations & Requirements: Annual food sales are $700,000 and growing. (Sales are a 54% banquet and 46% ala carte) The Club uses quality ingredients and is looking to enhance the dining experience and consistency in presentation and quality. A kitchen staff budget is $300,000 which supports a kitchen of twelve. The Club won the American Culinary Federation “Facility of Excellence” Award in 2012.
The new Executive Chef will need to focus on ticket times, food quality, consistency and staff training as the Club has experienced these issues recently. It is the expectation that the Chef interacts regularly with membership, at Association golf tournaments, wine dinners, beer dinners, garden club. Above average communication skills required.
