Exciting Times – Club’s Enhancement Project:

 “Preparing for the next 50 years” said General Manager and COO, Robin Blankhorst, “requires a building and campus that will adapt as our Membership evolves – this project gives the Club just that. Club trends are changing.  Members’ expectations, interests and activities include the whole family.  This project positions us to meet those needs now and wll into the future.”  In response to those trends, the project also includes an expansive outdoor waterfront entertainment patio, new pool and additional outdoor dining venues and a 4000 sq./ft. new Kitchen.

For a half a century, Royal Palm Yacht & Country Club has been an elegant tradition among the private golf clubs in Palm Beach County. Today, it remains one of the few private, by-invitation-only, country clubs in Boca Raton that is overseen by its members.

With an idyllic location on the Intracoastal Waterway in Boca Raton, Royal Palm encompasses everything that makes South Florida living “another day in paradise.”  The Jack Nicklaus Signature golf course, premier yacht basin and full calendar of social events and activities make Royal Palm Yacht & Country Club the singular choice for a complete club lifestyle in South Florida.

Dining Facilities:

Harbor Grille – A casual waterfront outdoor setting, contemporary American cuisine serving lunch and dinner with a 180 seat capacity.

1959 – A more formal dining room with 40 seat capacity.

19th Hole – A casual stop that serves breakfast and lunch seven days per week.

Fahrenheit: Private dining

Private Member & Club Events – Serving banquets up to 325 guests. The Club offers three (3) party rooms on property as booked.

Additional Information:

  • Annual food sales at $2.1M; total F&B Sales $2.9M.
  • The desired Food cost is 50% with a sales mix of 62% a la carte and 38% banquet.
  • There are 28 total kitchen employees supported by a $915,000 labor budget.
  • The Club supports three (3) kitchens throughout property.
  • The Executive Chef is supported by three (3) Sous Chef’s and a Pastry Chef.
  • The Clubhouse’s are 75,000 sq. ft. and supported by 500 members.
  • The Club operates 12 months with the majority of business between the months of October and April.
  • The Executive Chef reports to the General Manager and Food & Beverage Director. This individual works directly with the Social & Catering Director, Clubhouse Manager, Director of Human Resources and Controller.
  • This individual will take direction and listen to the members as well as managements suggestions.

The Executive Chef; Scope & Person: The Executive Chef is responsible for all food and production service for each dining outlet located in both the Country Clubhouse and Yacht Clubs.  This position is responsible for all culinary aspects of planning and executing Member and non-member events and requires a significant amount of presence, visibility and Member interaction.  The Executive Chef will provide the Members and their guests an exceptional experience by delivering consistent high-quality products.

It will be important that the new professional align him or herself with, and embrace, the Club’s golf culture, forging partner relationships with the membership, management and line personnel, all built on honesty, respect and dedication. The Executive Chef will always look for improvement while continuing to maintain the high standards of excellence already instilled into the kitchen operation. The ideal candidate will possess a true passion for professional cooking and have a proven and stable track record of culinary excellence at recognized properties.

The Executive Chef is responsible for the creation of and adherence to operating budgets which includes sales and overhead costs. He or she is in charge of hiring, training and other personnel related matters of the culinary staff needed to execute the culinary operation successfully on a year-round basis.

    • Someone who understands the private club sector and is driven by pride, member satisfaction and teamwork.
    • Ability to handle pressure, creativity to offer a diversity of items and an approach that facilitates communication and a sense of unity.
    • Competent in organization and time management skills.
    • The ability to demonstrate good judgment, problem solving, and decision-making skills.
    • Proficient in the use of technology, i.e., Microsoft Office, Outlook etc. Jonas experiences a plus.
    • Able to work in a team environment and relate well to other department heads and membership.
  • Sets the example for professionalism when working and communicating with the service and catering staff.

 

  • Develops recipes and standards for food preparation and presentation which help to assure a consistently high quality product.
