History: The University of Texas Golf Club was a vision that became a reality when some of today’s most influential University supporters set out on a mission to build a permanent home for The UT Golf Teams and secondary home for The UT Tennis Teams. The University of Texas Golf Club celebrated its 10th anniversary in 2013 and continues to celebrate its many accomplishments! This private golf club offers members a superior golf and tennis experience, coupled with camaraderie, pride and special family events, making it the best country club in Texas. The club is highly regarded in the Austin community and is the practice site of The University of Texas Men’s & Women’s Golf Teams. The Club is fortunate to have a well-traveled younger membership with an average age of 45.
Facilities: The 16,400 sq. ft. clubhouse features various sized member dining areas for casual and more formal service and bar. Maximum seating capacity at all indoor, terrace venues is up to 200. The Club is Golf and Community focused meaning clubhouse services & cuisine must be top notch! There are two kitchens, a main & Pool quick serve; both designed for production and designed for a la carte services in conjunction with member dining areas. The Tower Room/Founders Bar is open Tuesdays through Sunday and serves between 80-100 guests daily. The Pool operation is open Memorial Day through Labor Day.
This 7,412-yard, Par 71 Bechtol Russell designed championship course, official home of The UT Golf Teams and a secondary home for The UT Tennis Teams, displays its greatness. From its convenient practice facility and richly appointed clubhouse, to its panoramic hill country setting nestled between Lake Travis and Lake Austin.
The Position: The University of Texas Golf Club is looking for a Chef that will offer a menu that features a mix of club favorites; contemporary cuisine with Southwest influences and family friendly offerings. He/she will work towards developing a solid culinary team that is creative and takes pride in what is produced. The Club will require a Chef that will instill standards into the kitchen operation, which will include a strong commitment to training programs to ultimately result in high service standards that reflect in the food and beverage programs. The Chef will also offer healthy alternatives and a wide variety on the menus. The current Chef has been in the position for seven (7) years.
Job Requirements:
- ACF Certification and/or college degree in culinary arts is preferred.
- An engaging personality – one that both staff and membership can relate to and rally around.
- Club and commercial experience preferred.
- A foundation of excellent culinary and leadership skills.
- The ability to handle multiple priorities and delegate assignments to the appropriate individuals based on their skills, roles, and interests.
- Excellent written and verbal skills for effective communication, the ability to facilitate small group presentations, and the skills to be an effective listener are all sought after skills
- Competent in organizational, time management skills.
- The ability to demonstrate good judgment, problem solving, and decision-making skills. The chef is responsible for leading the product knowledge training for all positions. The chef has a leading role in the vision and marketing of the culinary operation.
Key Expectations and Goals:
- The ability to organize and develop systems to ensure a smooth food service operation.
- Ensures that high standards of sanitation, cleanliness, and safety are maintained throughout all kitchen areas at all times. This includes site visits to all outlets.
- Cooks or directly supervises the cooking of items that require skillful preparation.
- Establishes controls to minimize food and supply waste and theft.
- Develops recipes and techniques for food preparation and presentation which help to assure a consistently high quality and to minimize food costs; exercises portion control over all items served and assists in establishing menu selling prices.
- Interacts enthusiastically with, and is visible to, the membership.
Summary: The successful candidate must be compatible with the nature of the Club. He or she must demonstrate values, conduct, and integrity consistent with the caring philosophy in place. The club will only consider a career professional with a lifelong passion for cooking, actively engaged in professional development, ideally of Texas origin. Must possess a proven and stable record of culinary excellence. An individual on-the-rise with some commercial for-profit experiences, ideally in hotels. The club is looking for a long-term match.
The chef is responsible to maintain a reasonable cost of goods while using only the finest of ingredients. The chef must be attuned to market demands to create a “food” buzz around the club matching its overall facilities. Members enjoy :clubby food.” Additionally, it is expected that the chef be well-spoken, regularly visible in member areas and comfortable in social settings speaking to member groups. The chef’s professional demeanor should match today’s culinary standards and trands. This is a working position requiring a hands-on approach towards mentoring staff, fortifying their skills/efficiencies, then further elevating variety and presentations.
Additional Information:
- Total annual food sales at $1,100,000.
- The desired Food cost is 38 % with a sales mix of 44% a la carte, 30% banquet, 16% club events and 10% pool and beverage cart.
- Total full-time kitchen employees is 16 supported by a $450,000 labor budget.
- A culinary/warewashing team of 3.
- The Chef is responsible for purchasing and two (2) sous chefs.
- Works as part of management staff with Clubhouse Manager, Catering/Events Manager, Controller and Children’s Activities Manager.
- The Executive Chef will report to the General Manager.
