The Club is supported by 1,400 members supporting club culinary programing with food sales exceeding $6 million annual.

Dining facilities include three a la carte dining rooms, a poolside restaurant, a ballroom seating 400, several additional elegantly appointed private party rooms and a wine cellar. The Club has a high volume banquet operation and can accommodate events up to 1200 guests.

  • Prior hot and cold food competition experience is a big plus.
  • Prior experience as a sous-chef at a top quality city or country club is a must.
  • Formal culinary school or apprenticeship education required.
  • Must have schedule flexibility for both AM/PM shifts, weekends and holidays
  • Strong command of the English language to include speaking, reading and writing.

SUMMARY: Directly involved in daily production while providing leadership and training to culinary staff, ensuring a quality, consistent product for members and guests.

EXPECTATIONS:

  • Provide platinum service while maintaining a clean and safe environment for members, guests, and staff
  • Know and embrace the mission statement and platinum service basics
  • Be prepared to work all shifts, weekdays, weekends, holidays

ESSENTIAL DUTIES include the following (other duties may be assigned):

  • Assist and provide management oversight at all a la carte locations and banquets
  • Be able to prepare, organize, and work all stations in all outlets
  • Ensure all shifts are covered in the event of vacations or call-outs
  • Expedite during meal periods; taste and inspect food to ensure quality preparation and presentation
  • Develop, maintain, and execute comprehensive training program for all culinary staff
  • Establish and enforce standard operating procedures
  • Know, teach, and enforce proper sanitation practices and health department guidelines; inspect to ensure compliance
  • Assist Executive Chef with development of and adherence to budgets
  • Maintain budgeted food cost and labor goals; take corrective action as needed
  • Conduct culinary manager and staff meetings
  • Collaborate on menu planning, development, and costing for banquets and a la carte outlets
  • Study current industry trends
  • Ensure maintenance of proper inventory and rotation of products
  • Maintain good working relationships with front-of-house managers
  • Interact professionally and appropriately with members
  • Foster an energetic atmosphere of cooperation and mutual respect
  • Work closely with peer Sous Chefs

SKILLS/ABILITIES:

  • Thorough knowledge of diverse cuisines and culinary trends, especially southern

SUPERVISORY RESPONSIBILITIES:
Supervise and effectively interact staff of approximately 50.
Responsibilities include involvement in the interview and selection of culinary personnel; training; scheduling; planning and assigning work; appraising performance; rewarding and disciplining staff; addressing complaints and resolving problems; processing payroll; facilitating staff meetings.

EDUCATION and/or EXPERIENCE:
3-5 years’ experience in high-volume kitchen management with F&B sales of at least $4-6 million annually, experience in both a la carte and banquets. Culinary degree required.
