Position Summary: The Pastry Chef is a critical position at the Sea Pines Resort. In this role, we are looking for the Chef to rebrand the outlets and grow a career at the Resort. The Pastry Chef will lead the day-to-day operations of the Bakery and the bake shop. The operation is successfully run currently yet the new Pastry Chef will need to develop and oversee the full resort programs. Example – if he/she notices a higher expense for burger buns at Harborside and can make fresh buns daily, we want them to develop this project and capitalize on financial outcomes. Candidate must have strong technical skill as well as a business mind. At all times, the Pastry Chef will enforce company policies and standards, always.

Primary Functions and Duties:
- Full resort development and implementation of new standards and product line.
- Rebranding of all a la carte outlet desserts, to include 5+ restaurants.
- Strong understanding of new development and openings, building proformas for rebranding.
- Building a new team and setting new standards.
- Strong understanding of equipment for development during capital expenditures.
- A chef that is passionate about baking and pastry, fresh ingredients and most importantly is in the kitchen, teaching and personally working on busy shifts assuring proper techniques and consistency standards.
- Show financial responsibility for all outlets.
- Develop professional relationships with all Resort personnel.
Additional Information:
- Annual food and beverage sales at $28M; catering $4M
- Coast and QD are the largest a la carte outlets doing over 1,000 people a day easy, so very heavy volume
- Bakery does about 600+ just for breakfast and lunch
- Links is the high-end restaurant, so these desserts are specialized -serving about 150 at dinner, and approximately 300 for lunch and breakfast.
- Frasers, tavern style similar numbers to Links
- Current staff includes two (2) in the bakeshop and one (1) FT team member in the Bakery. As the Resort grows the program, the department will grow as well.
Initial Priorities:
- Engagement- get to know team members, current operations, and culture – Who are we and why do we do the things we do.
- Fully learn and understand the resort and the program which will be launched. The capital expenditure process will have the Bakery as priority- so could be a full revamp of all equipment and kitchen layout but understanding the operation would need to the first priority.
- Build standards while forging strong working relationships.
- Direct baking and pastry consistency and excellence in all areas.
- Suggest and Implement improvements where needed working closely and gaining approval of Executive Chef is a must.
