Senior Sous Chefs – A la Carte & Banquets
There is a renaissance happening at one of Miami’s finest private clubs, Riviera Country Club in Coral Gables, FL. Established in 1948, this traditional member-owned club with regarded standards is replacing its existing clubhouse with a new 60,000-square-foot, two-story clubhouse that will accompany the properties newly renovated 18-hole golf course; scheduled to open in 2019. New amenities include casual and refined dining outlets, comfortable bar areas to mix and enjoy fellowship and sports, a 8,000-square-foot fitness center, an aquatic complex and 25-meter lap pool plus family pool; a 6,000-square-foot event room to accommodate 400 members and other amenities making it best in class.
The Plan: The club’s highly-regarded Executive Chef Gerard Lewis, CEC, CCA, is planning ahead and beginning to assemble his culinary management team. The club will selectively hire “two key culinary leadership positions” to further advance their a la carte standards and event services to appeal to a broad range of palates and ages. Individuals should understand the club is very family-centric. These positions will require diverse technical knowledge, volume experiences and an ownership mindset as they will work closely with the EC creating menu programing that is fresh & appealing reflecting diverse cuisines, presentation styles and overall goodness.
Job Requirements:
- Individuals who can be creative with menus and create a dynamic with his/her team, ultimately pleasing the palates of many “foodies” within the Club while maintaining respect for traditional fare for the formal tenured members of the Club.
- Chefs who get the bigger picture, one that enjoy teaching and training and driven to build a bonded culinary culture.
- A Team leader, maintaining a positive and instructional rapport with kitchen staff and being equality influential training service staff.
Key Qualities and Expectations:
- Individuals who are self-starters, one who “treats it as if their name is on every plate” and one who will take command in the absence of the Executive Chef.
- A stable career track record at recognized quality properties; working with large teams and in a culture of excellence.
- Competent in organizational, time management skills.
- The ability to demonstrate good judgment, problem-solving, and decision-making skills with required urgency.
- Individuals who are self-starters and will take command in the absence of the Executive Chef.
