History, Current Programs & Culinary Objective
Since its founding, no other club in the state has produced as many prominent figures in state golf history. Membership has played a tremendous role in advancing the game of golf, on both the local and national stage.
In addition to golf, a full range of activities are available to members and their families throughout the four seasons of the year. In summer, the outdoor pool is a high-energy spot for kids and families. The Club’s 5 outdoor and 5 indoor tennis courts are active year round. The Club’s state of the art Fitness Center includes a vast selection of cardio-vascular equipment, resistance strength pieces and free weights. And the “Club 4 Kids” located in the Tennis and Fitness Complex offering children a safe and organized activities.
Above all, the club’s greatest assess is its memberships and staff and embraces its place in the community. The board and management have worked hard to keep facilities well maintained with additional improvement planned. Its goal in selecting its next Executive Chef is to elevate its culinary program to greatness.
Scope, Expectations & Requirements: The Chef is responsible for all food production in its two kitchens. Annual food sales near $1.75M while maintaining a 40% cost of goods. The Club uses quality ingredients while hopes to become a more scratch and consistently great culinary program going forward. A culinary and stewarding staff of 20 plus support a sizeable and well equipped kitchen capable of scratch production and enhanced sanitation practices. The overall goal is member satisfaction through building a matching team!
The club features four ala’ carte restaurant outlets offering casual and formal dining styles with the Murra Room its busiest outlet. The main kitchen is sizable and well-equipped. A typical meal period serves up to 150 covers plus banquets. Sales are closely split between a la carte & banquets. Restaurants are noted for their personalized service with menus offering club traditions, familiar and progressive mid-America fare.
Beyond skills, equally important in this selection is the candidate’s character; the innate ability to build a professional, focused and friendly kitchen environment complementary of the front-of-the-house staff, membership and management will trump all other required skills. Salary and Benefits: As with the Club’s stable history of hiring exceptional management personnel, the Club is looking for a long-term match. (The Club’s current chef of many years is leaving for personal merits.) The compensation package includes a respectful base salary plus excellent benefits including a comprehensive medical insurance program; 401k program with employer matching contribution; vacation; professional development and dining allowances. A relocation allowance will also be provided. Candidate screening will be completed in mid-June 2014, followed by interviews and tastings with employment beginning late July 2014.
